It depends on what you’re going for I guess. Soy-based mock meats can be good if you’re imitating something like chicken nuggets I find, but I think that seitan works well for things like hot dogs and steaks.
tofu is best when it’s served as tofu, not as a meat replacement. asian countries perfected tofu dishes hundreds of years ago. i have some kind of tofu at least once per day
gluten meat/seitan is great especially to make roasts and ch’cken or t’rkey type things
