On reddit, I was used to posts automatically hiding themselves if I voted up or down, or there was a way to hide individual stories manually. Is there a way to do this on Kbin, or even better across the Fediverse in general?

Yes if you open the hamburger menu on the top left to open settings there is a box to tick to hide posts that you’ve already read
