Recently moved away from ubiquities UDM over to Mikrotik while still using ubiquiti wifi. Wondering if there was something I could self host that will take the flow data from the Tik and present some beautiful wifi device information ie how much data a device has used, what applications that device is using ie instagram, etc.

Not sure if the tik Logs traffic that detailed. But you could setup a remote logserver (syslog-ng) and have the tik send it logs to that and then push them with logstash into an ELK stack and use that. Or not Loki and Grafana analyze the log and build the dashboards you need/want.
Grafana would be the nicest look imo.
