Can I chose a different sound for text notifications on my Apple Watch? I am on call for work and would be nice to sleep with it on and hear an ear splitting god awful noise to make sure it wakes me up.

Typical apple limits flexibility on what one can do with their devices… That being said the vibrate feature when set to prominent does work well to waking me up
No, unfortunately you cannot customize notification sounds on the watch.
