When I absolutely cannot sleep, I get up, find a notepad, and try to plan things on paper that I’d like to do.
Replace the kitchen, change the car, that sort of thing. Add things up, estimate times, etc.
They can be hypothetical, but it gives me a shift from being unable to sleep. And occasionally, the planning is actually useful in the future.
