      The part on many of the chicken and waffle dishes that say “smothered in chicken and onion gravy”?

        Oh, sorry! You commented and linked as if it were something regional, and I wondered whether it was due to an alternative style of gravy that you had.

        If it’s just thickened chicken stock and onions, then thats awesome too.
