My dinner tonight was fabulous

I just use 1/2 cup of noodles, 1 cup of rice, 2 cups of water.
Whoa, cool! Noodles AND rice together! I must read more about this…
It’s a very forgiving dish because the noodles soak up residual moisture leaving the rice fluffy.

It is brutal. I was even 100% recovered and I’m back in it again. You should hear some of the kids coughing and spluttering in daycare.

Tried to convince my manager that we should shut the office for the afternoon and go for a trip to one of the chocolatier places as a team bonding experience. It didn’t work today… but I’m sure I’ll try again tomorrow.

Oh it’s breakfast time so I can show you all my breakfast from this morning. Humungous breakfast burrito from that same diner I went to last night. Fork for scale. That’s their home made “green chilli” on the side, which was not green but was delicious.
Breakfast burritos are actually the best burritos. I hope it was excellent!
It really was. It had egg, sausage, cheese, onion, hash brown and peppers in it I think. Only thing was it was so chonky I had to use a fork’n knife!
I must admit I’m quite jealous of you Bull… How have you found the portion size to price ratio? The food there does look gigantic, but is it actually as good value as it seems once you convert the freedom eagles over into dollarydoos?
It hurts the wallet. It’s not a good time to be an AUD wielder in USD land at the moment. They are having their own cost of living crisis and a lot of places food items look like our prices, making them mega expensive when you convert to AUD. Plus you have to add tax and tip.
Yeah that’s what I was thinking. Even before recent times when prices there were like half of ours, once you convert nd add tax + a tip I always thought it’d probably end up being the same or more expensive
The last time I was here our dollar was worth more than theirs and their prices still low (2012), so with conversion tax and tip things were CHEAP. Not now that our dollar is only worth 65c to theirs and the price hikes of everything. Those cheap days are gone.

Make a gratin. Blanch the rest and then freeze them.
I’ve never made a gratin in my life and I haven’t been having that much dairy recently so wondering if I want to go down that route. But blanching and freezing looks like a winner - that way my friends can use some when they come back too! Thanks for that link
I can’t see why you can’t make it with coconut cream or another alternative. As for cheese it uses such a tiny amount you could skip it all together. Top it with breadcrumbs and butter/margarine/spread/oil. Very easy to do and there would be so many vegan recipes out there for you to try.
Not going to lie I’m definitely not a fan of a lot of the non dairy alternatives in dishes like gratin :( I feel like maybe I might go for something less stodgy. Might change my mind tomorrow though…

Anchovies and a little oil in first, stir to dissolve anchovies - then broccoli etc
I vote for doing some cheese and cauliflower style pies, as they freeze well.
I’m not experienced with making pies and the online recipes look annoying. But I’d probably steam the veg, make a roux cheese sauce with garlic and onion powder, mix, then either use a pie maker or do pastie shapes with premade pastry sheets. It’s uh… a hand pie. Yeah.
Edit: You can also make a few different meals with it, it doesn’t have to be just one

Oh! I didn’t read the recipe :P Didn’t know there’s oyster sauce there. I just fry the red bean curd with ginger for a bit and then put the chinese cabbage in, followed by the rest of the veggies and what not. Baby corn goes well in there too. Do not eat immediately. The longer it sits in the fridge the better it tastes.

You could just leave it out. I also add some brown sugar to it but you don’t have to. It’s mostly just fry the red bean curd and put in any veggies you like.

Ooh thanks for that rec. The place I’m staying at has plenty of East Asian ingredients and condiments so braising might be very much on the menu.
You could make a broccoli frittata. My favourite pasta has broccoli fried with bacon, onion, pesto and a dash of cream, all done while the pasta is cooking. You could do those Indian style vege Fritters. Or a chicken and broccoli stir fry with hoisin or cashews.
Bit of stir fry broccoli with maybe some garlic and soy sauce?
Roast broccoli with a little oil and chilli is delicious
Wait, didn’t Smeg or someone have a broccoli pasta they really liked? A while ago a few DT regulars were cooking it for dinner. Broccoli was cooked down into a liquidy looking sauce, I can’t find it.
